I'm going to say Perth. The city is a little sleepy compared with Sydney and Melbourne, but the location is unrivalled. The beaches (especially Cottesloe) are unbelievable and there's nothing better than heading down to one of them in the late afternoon and then enjoying a BBQ on the beach.
I also loved Fremantle (about 19km away from Perth). It's a great place to go for an evening and is The city is justifiably popular with diners, catering for all tastes and budgets. Italian and Asian cuisine is abundant as well as a vast variety of seafood restaurants. There are numerous cafes and coffee shops situated around Fremantle, particularly on its famous 'Cappuccino Strip' - a section of South Terrace given over to alfresco dining since 1977.
@spudsstuff: the Gold Coast is great, but don't you find it way too full of backpackers? Not sure if it still counts as the Gold Coast, but I though Fraser Island was brilliant.
I love the clifftop walk between Bondi and Bronte beaches in Sydney. It's a brilliant thing to do on a Saturday or Sunday morning in the city.
Head down to south Bondi beach and start walking up the cliff to your right. You'll pass Iceberg, which is a great bar (for a pic see the Landmarks section of the site). The walk to Bronte is only 2.5km and it takes you through Tamarama (my favourite Sydney beach). By the time you hit Bronte beach you'll be ready for brunch and there are a couple of really nice ocean facing places where you can tuck in!
I was in Sydney a couple of months back and went to Bondi for the first time. Nice spot and I definitely intend to go back. Might do the walk you suggest.
Visitors to the land of Oz beware... George W has just arrived in Sydney with a 700 man strong entourange. Now probably isn't the best time to visit...

I haven't been to Perth but from what you have said about it, it does sound worth visiting. Personally I love the Gold Coast, especially the beaches.
